Raw Vegan Berry Slices


My failed 4th of July treat, but they still taste great and are super easy to make so I thought I could still share the recipe.

Ingredients:

1 cup cashews (soaked overnight)
2 frozen bananas
1 cup fresh or frozen strawberries
1 cup fresh or frozen blueberries
¼-½ cup rice malt syrup
almond milk

Method:

Cover a small spring form with cling foil. Process the banana, rice malt syrup and cashews in a food processor or blender until smooth. Take 3/4th of it out and give into a bowl and place in the freezer to keep cold. Next, add the blueberries to the blender and process again. You may have to add some liquid. Simply add a bit at a time. Give the mixture into the spring form and spread it evenly. Place in the freezer and clean the blender. Give the blueberry mixture at least 30 minutes to an your to set. The white layer is heavier and will just sink in otherwise. Next take 2/3 of the cashew mix and spread on top of the blueberry layer. Place it back in the freezer. Then process the remaining cashew banana mix with the strawberries and spread on top. 

To serve, use a lot of violence or a chainsaw to cut.
