Ginger Carrot Crush

On days when you feel a little dehydrated but need something tastier than water, I like to make a smoothie based on these ingredients. The cucumber has a high water content so will naturally hydrate your cells, whilst the apples provide a little sweetness that complements the carrots so well. What’s more, fresh ginger has fantastic health benefits including relaxing the digestive tract, boosting your immune system and promoting healthy sweating, which can improve your bodies efficiency when regulating your temperature during hot or cold spells.

Don’t be afraid to tweak this basic recipe to your liking – vary the amount of ginger (careful: it’s strong!), add more or less water, or swap out some of the water for ice to make it even more refreshing. I hope you like it!

Ingredients:
2 small apples
2 small-medium carrots
2-inch portion of cucumber
1/2 tsp chopped fresh ginger
1 cup water

1. Core the apples, top and tail the carrots, and chop these and the cucumber into smaller chunks. (You don’t have to peel them unless you really want to – the skin contains lots of fibre and vitamins so I prefer to leave them on, and it really doesn’t affect the flavour or texture).

2. Peel and chop a small portion of fresh ginger so that it fills 1/2 teaspoon.

3. Add all of the ingredients as well as the water to a blender and blitz it until super smooth.
