4th July Raspberry, Blueberry and Vanilla Pancakes


With these pancakes not only do you get the choice of 3 delicious flavours, you also get a hit of patriotism and a long list of health-assuring ingredients that will keep you fueled for hours!


4th July raspberry, blueberry and vanilla pancakes with banana slices, fresh raspberries and maple syrup


Ingredients: 

• 1/2 cup + 3 tbsp flour (I used buckwheat)
• 1 tsp baking powder
• 1 mashed banana, leaving a few slices if you want
• 2 flax eggs* (1 flax egg = 1 tbsp flax meal + 3 tbsp water left in fridge for at least 30 minutes, I leave mine overnight)
• 1/3 cup almond milk
• 1 tsp vanilla extract
• 1/2 cup frozen raspberries
• 1/2 cup frozen blueberries
• oil to cook (I use coconut oil)

Method:

Mix the first 2 (dry) ingredients together, and mix the banana, flax eggs and almond milk separately, then mix wet with dry making sure to not over mix. Split the mixture into 3 equal parts and in one, add the vanilla extract. 

Heat the frozen raspberries and add the juice to the second mixture (you may need to add a splash of water to get the juice) and then do the same with the blueberries in the third mixture. 

Heat a little oil on a pan, turn the heat to medium low and cook about 1/4 cup mixture for 1-2 minutes until bubbles appear on top, flip, cook for 1 min or so and then stack and repeat for the rest of the mixture.
