1 packed cup dates
4 tbsp
coconut oil
1 tbsp
lucuma powder
2 tbsp
coconut butter (or peanut butter if you want to put a Snickers twist on it)
Generous
pinch of sea salt
Toppings:
1/6 cup
chopped nuts of choice (again, peanuts for a Snickers version)
6 squares
of your favourite dark chocolate, vegan, raw, sugarfree, whatever you wish
Pit the
dates and put them in a blender/food processor along with all the other
ingredients (except for the toppings) and process until your fudge is a thick,
smooth paste. Spread it out in a small, lined baking dish and scatter the
chopped nuts on top.
Let set in
the fridge or freezer until it has set and is firm enough to cut up in 1-inch squares.
Melt the
chocolate in a heat-proof bowl over a pot of simmering water. Be careful not to
let the chocolate come in contact with the water. Drizzle it on top of the
fudge and keep in either the fridge or freezer, whatever suits you best. Personally, I like
to keep mine in the freezer as they’re still very soft and easy to chew
even when they’re frozen. That is entirely up to you though, they'll be delicious either way!
