Coconut-Carob-Lime Nice Cream Sandwiches


Coconut Carob & Lime Nice Cream Sandwiches

Coconut cookies:

Yields 2 cookies

1 fresh or soaked date, peeled, pitted and mashed with a splash of water
1 tbsp coconut flour
2 tbsp rolled oats
1 tbsp coconut oil
2 tsp raw date sugar or coconut sugar
1 tsp cashew butter (any nut butter would work)
¼ tsp baking powder

Start by pre-heating your oven to 180oC/360oF. Combine all ingredients with a fork or by hand, then divide the dough in two and flatten the cookies out on a lined baking tray. Bake them for 12-13 minutes or until they start to brown around the edges. Leave the cookies to cool for a few minutes before you remove them from the baking tray.

Carob cookies:

Exact same recipe as the coconut cookies, only replace 1 tsp of the coconut flour with 1 tsp carob powder (or make chocolate cookies using cacao/cocoa powder)

Lime nana ice cream:

1 overripe, frozen banana
4 tbsp coconut cream 
1 tsp freshly squeezed lime juice
1 ½ tbsp unsweetened almond milk

Blend all ingredients in a food processor until completely smooth, add a bit more lime juice if you wish, simple as that.

Before you assemble the nice cream sandwiches, make sure the cookies are cool enough (pop them in the freezer for a few minutes if you’d like), or you’ll have a pair of really messy sandwiches on your hands ;)
You can sprinkle crushed nuts, desiccated coconut, cacao powder etc. around the sides for decoration and even pipe the nana ice cream on for a fancy touch. I used pistachios on mine and they went really well with the lime and carob flavour, but use your imagination, the variations are endless!
